Bibingkoy October 17 (Sun)
A specialty from Cavite, the bibingkoy is a kakanin made famous by the mother of Lola Lolit Alejo, which her family has been selling in the public market for decades. It's buchi stuffed with red mung bean paste, cooked like bibingka, and served like ginataan. Our version has ube halaya filling, which is made in-house, and baked along with the thick coconut cream.
It comes in a 9-inch round aluminium pan and sheltered in a box.
